Russian Salad - Ensalada Rusa Recipe

(M)Example of description: Sprinkle Spanish tortilla espanola with little fresh parsley and accompany with some crusty bread and a salad for lunch, or serve up with a piece of toast and coffee for breakfast.

Recipes Ingredients:

(Servings: 7~8 people | Preparation time: 40 minutes)


  • Potato (medium-sized, peeled, diced and boiled): 1 pound
  • Carrot (peeled, diced and cooked): 0.5 cup
  • Green pea (cooked): 0.5 cup
  • Green bean (cut into pieces and cooked): 0.5 cup
  • Mayonnaise*: 0.75 cup
  • Garlic (minced): 1 clove
  • Salt
  • Pepper
  • Red Bell Pepper (cut into strips)

Cooking Methods:

  1. Using salad bowl, mix all vegetable except the red bell pepper.
  2. Add in pepper and salt to the vegetable mix and season to taste.
  3. Mix garlic with mayonnaise and thoroughly fold it into the vegetable mixture with a rubber spatula.
  4. Finally, garnish the dish with pepper strips.

Cooking Suggestions(*):

  1. Other vegetables such as mushrooms and tomatoes can be added to create variety to the dish.
  2. Try to substitute mayonnaise with non-fat yogurt to reduce the content of fat in the salad.
