Spanish cooks never run out of ideas to serve the best dishes to their customer. Gazpacho or Cold Fresh Vegetable Soup recipe is one of the popular vegetable recipes for Spaniards. With variety of vegetables used, it will definitely bring out the combination of flavor of different vegetables.
Recipes Ingredients:
(Serving: 6~8 people | Preparation time: 45 minutes | Refrigeration time: 2 hours)
- Cucumber (medium-sized, peeled and shopped): 2
- Tomato (medium-sized, peeled and chopped): 5
- Green pepper (medium-sized, cleaned out and chopped): 1
- Onion (large and chopped): 1
- French or Italian bread (trimmed of crusts and chopped): 4 cups
- Garlic (chopped): 2 teaspoons
- Salt: 4 teaspoons
- Olive Oil: 4 teaspoons
- Tomato Paste: 1 tablespoon
- Red Wine Vinegar: 0.25 cup
- Water(cold): 4 cups
Cooking Methods:
- Mix cucumber, onion, tomato, garlic, green pepper and bread thoroughly in a deep bowl.
- Add in salt, vinegar and water into the mixture and stir well.
- Puree mixture in a food processor / mill, working with 2 cups at a time*. Transfer puree to a large bowl and beat olive oil and tomato paste into puree with a whisk.
- Cover the bowl tightly with foil or plastic wrap and keep in fridge for at least 2 hours.
- Stir soup lightly just before serving.
Cooking Suggestions(*):
- Please get help from experience cook if you never use a food mill before. Discard any pulp left in the mill after entire mixture has been pureed.
