Cucumber, Tomato, and Green Pepper Spanish Recipe

Spanish often will prepare mixture of cucumber, tomato and green pepper as their light meal. As it cotains mixture of vegetable, it is consider as healthy dish.

Recipes Ingredients:

(Serving: 7~8 people | Preparation time: 30 minutes | Marination time: ~45 minutes)


  • Cucumber (large): 1
  • Fresh parsley (finely chopped): 1 tablespoon
  • Green pepper (large): 1
  • Olive oil: 1 cup
  • Onion (chopped): 3 - 4 slices
  • Salt: 0.5 teaspoon
  • Tomato (medium size): 2
  • Vinegar: 0.5 cup

Cooking Methods:

  1. Mix parsley, onion and salt into a jar and cover with a lid. Add in olive oil and marinate for ~15 - 20 minutes.
  2. Next, prepare the vegetable. Peel and slice cucumber into at least 16 circles. Cut each tomato into 8 wedges. Cut green pepper in half and clean out. Slice each half from top to bottom, making 8 strips. Then cut each strip in half to make 16 pieces. Put all vegetables in a bowl.
  3. Add vinegar to olive oil mixture to add flavor. Close the lid on jar tightly and shake. Next, pour dressing over vegetables. Marinate vegetables for at least 30 minutes in fridge before serving.
  4. Center pieces of green pepper, tomato, and cucumber on toothpicks and serve.

  1. Vinegar and onion give this fresh dish a little extra flavour.
