Albondigas or Spanish Meatballs make a delicious light meal, especially when served with a vegetable or a salad and bread. Spanish Albondigas often serves with tomato sauce as an appetizer or main course.
Recipes Ingredients:
(Serving: 11~12 people | Preparation time: 50 minutes)
- Bread (soaked in clean water): 2 slices
- Dash of nutmeg
- Egg: 1
- Fresh parsley (finely chopped): 1 tablespoon
- Ground beef*: 1 lb.
- Ground chorizo or other spicy sausage*: 4 oz
- Olive oil: 3 tablespoons
- Salt: 0.75 teaspoon
Cooking Methods:
- Using a large bowl, combine and mix meat, salt, nutmeg, and parsley to form a meat mixture.
- Squeeze water from bread. Add bread and egg to meat mixture and mix it again.
- After mixing, form meat mixture into about 36 small balls.
- Heat olive oil in a frying pan and thoroughly cook the meatballs until it turns into brown color. The process will take about 20 minutes depending on the heat apply.
- Once cooked, serve immediately.
Cooking Suggestions(*):
- To lower fat content of the meatballs, try to substitute ground turkey and spicy turkey sausage for the beef and chorizo.
