Spanish Oven Baked Tortilla Recipe

Recipes Ingredients:

(Serving: 15~16 people)


  • Garlic Clove (large; crushed): 1
  • Scallion (white and green parts finely chopped): 4
  • Green Bell Pepper (seeded; finely diced): 1
  • Red Bell Pepper (seeded; finely diced): 1
  • Potato (boiled; peeled and diced): 6 oz/175 gram
  • Egg (large): 5
  • Sour Cream: 0.5 cup
  • Spanish Rocal Cheese (grated): 6 oz/175 gram*
  • Spanish Olive Oil: 4 tablespoons
  • Fresh Chive
  • Salt
  • Pepper
  • Slices of bread
  • Green Salad (for serving)

Cooking Methods:

  1. Oven need to be preheat to 375 F (Farrenheit)/ 190 C (degree).
  2. Prepare a baking sheet with foil and brush with little olive oil. Size of the baking sheet is 7x10 inch/18x25 centimeter. Reserve the baking sheet.
  3. Heat skillet over medium heat, place olive oil, garlic, scallions and bell pepper in skillet and stir for 10 minutes.*
  4. Let the mixture cool, then place in potato and stir again.
  5. Beat the eggs, sour cream, Spanish Rocal cheese and chives together using a large bowl.
  6. Stir the cooled vegetables into the same bowl and season the mixture with salt to pepper to taste.
  7. Pour the mixture onto the baking sheet prepared earlier and smooth over the top.
  8. Bake the mixture in the preheated oven for 30 – 40 minutes, or until its color turned golden brown, puffed amd set in the center. Once done, remove from the oven and let it cool and set.
  9. Run a spatula around the edge, and then invert it onto a cutting board with browned-side up. Peel off the foil.*
  10. Let it cool down completely and then cut into 48 squared.*
  11. Serve on a platter with wooden toothpicks, or secure each square to a slice of bread, and accompany with a green salad.

Cooking Suggestions(*):

  1. You can always select another type of cheese to be used in this recipes, cheddar and Parmesan cheese is a good substitution.
  2. When you stir the vegetables, ideal time is 10 minutes. But it is good enough if you stir until the onions are softened, but not browned.
  3. If the tortilla surface looks a little runny, place it under a medium broiler to dry out.
  4. Trim the edge of tortilla is necessary.
